The fermentation of Zacapa 23 rum is very different from the other fermentation methods – the rum is taken to the foot of a mountain called “House Above the Clouds”. At over 7,000 metres altitude, where the oxygen level is lower, temperature is steadier than at low altitude.
It is thanks to this fermentation process that Zacapa rum is so smooth.
Zacapa rum ageing is based on the “Sistema Solera” method. This process implies keeping the whisky in special casks, with a mix of Spanish Sherry and American Whisky.
The Solera ageing method and the variety of reused casks result in an intensely aromatic rum.
